Ingredienti per
3 zucchine tonde (potete usare anche le zucchine lunge!)
1 cipolla
100 gr di macinato
1 fetta di mortadella
2 uova
30 gr di parmigiano
sale,pepe, olio evo
procedimento
sbollentate le zucchine in acqua bollente per 15 minuti, lasciatele raffreddare un pochino, poi tagliate la calotta superiore e con un coltellino affilato o con un cucchiaio svuotate delicatamente le zucchine. capovolgetele per eliminare l’acqua di cottura.
poggiate ll’interno delle zucchine in una padella con l’olio e la cipolla tritata e fate dorare, poi aggiungete il tritato e fatelo rosolare, infine aggiungete le uova, il parmigiano e la fetta di mortadella a pezzettni.
amalgamate bene e appena il condimento comincerà a rapprendersi, spegnete la fiamma. salata e pepate.
ponete le zucchine in una pirofila oleata e riempitele col composto preparato. chiudete con le proprie calottine. una ripassatina di olio, un pò di sale e inforniamo a 180° per venti minuti circa.
